Our Christmas of 2008
This was a special Christmas year for Carleton and I. We bought our first Christmas tree, the first Christmas tree deocration for him and me, the first Christmas dinner at our apartment together, the first time Mom Nickie had Christmas dinner with us, and the first time my parents had real Christmas. I was so excited to put Christmas dinner together for families. Past few months I had been thinking what to cook and how to deocorate for all the specail first Christmas matters. Few days before Christmas Mom Nickie called and said she was coming to join us for Chritmas, and we were so happy to hear that. Yet, I felt so bad that Carleton and I already had ordered Crown Pork for Christmas before we knew she was coming. Sorry, Mom Nickie for the pork. However, we had already figured out what to make for her for Christmas. Finally, Christmas Day arrived. The morning my parents and Emma came to our apartment with some gifts and food. Emma just could not wait to open gifts, so we decided to sit around Chritmas tree to hand each other gifts and to open them. We were all happy with what we got for Christmas. Thanks for everyone's help, and I finally put all the dinner together. This year we had Crown Pork with Fruit Stuffing, Seared Scallops with Lemon Basil Pesto, Basalmic Sautee Vegetables, Mashed Potatoes, Apple and Chestnut Stuffing, Baked Sweet Potatoes and Rosted Bellpepper Tomatoes Soup for dinner. For dessert we had Lemon Poppey Seed Glazed Cookies, Pecan Cookies, Cranberry Shortbread with Chocolate Glazed,Christmas Tree Cookies, Chocolate Toffee,Pistachio Pretzel Cranberry Barks, Tiramisu and Cranberry Upside-Down Cake. I put so much time into this special day for families, and all I really cared was everyone had great time together. However, we still always wish we could had had Christmas with all rest of our families together. Carleton and I both know someday in the future it will come true. We are looking forward next Christmas coming. Wish all the best for all of our families.
